Aroma of the Week : Rum Aroma Kit : Coconut

Coconut is another aroma note that covers a wide spectrum of flavours from the flesh of white coconut through to the toasted coconut flavour of macaroons. The Aroma Standard in the Aroma Academy Rum Aroma Kit tends more towards a flesh white coconut aroma.

The coconut aroma comes from some unusual esters and appears in some rums with a delightful mild halo of toasted notes. Rums containing the coconut aroma can also exhibit more of a distinct desiccated coconut note which develops from the cask finish during ageing.
