The several complex production steps in rum production produce a number of aldehydes including those found in a fresh orange peel. The origin of the glorious and fresh aroma of freshly raked orange peel comes from the same orange aldehydes that are liberated from the scent glands of the orange skin. The level of these orange aldehydes in the rum is typically low and their aroma is well integrated into the complex array of roasted and toasted notes. Acetaldehyde is associated with the oxidation of wines, beers and spirits. Excessive levels of Acetaldehyde is one of the more typical faults identified in these beverages as it only requires the presence of oxygen and a catalyst for it to be created. It can, therefore, occur both during production and in the finished bottled product and manifests itself in an Aroma that is typically described as green/green apple or lightly grassy and fruity.
