Raisins have a characteristic deep fruity spectrum of aroma notes that changes as the grapes age and start to dry. The particular aroma quality of raisins which we display in the Bourbon Aroma Kit is extremely complex. The aroma comes from precise blending of a large number of speciﬁc odorant molecules from various smell classes - including many types of fruity molecules from a variety of fruity notes. The fruity proﬁle is nuanced by the piquancy and slight ‘bite’ that comes from the inclusion of special acid aroma molecules.
This note adds to the sensory richness of the total Bourbon aroma proﬁle and is perceived at all levels of the enjoyment of Bourbon. This includes the initial analytical nosing, the joyous tasting with its panoply of aromas, and the exquisitely rich aroma/ﬂavour after-taste. This after-taste can last for several minutes during which period our smell brain enjoys the continual playing and re-playing of the spectrum of aromas found present in Bourbon.
